Greens, fruits and cheese salad




Love to mix salad with greens, fruits and cheese...and look at the color....lovely :)

You need grapes, green salads, arugula, sultanas/raisin, oregano herbs and feta cheese. As for the dressing, just mix olivev oil and balsamic vinegar. Nyumm! :)

Haloumi and Avocado Salad Recipe


Got the recipe from this website. I love haloumi :)


What you need: 


75gr baby spinach leaves
1 large avocado, peeled and sliced
180g cherry tomato, halved
24gr (1/4cup) chopped green onions (green shallots)
1tbsp oil ( i used olive oil)
180gr haloumi cheese


Dressing

2tbsp oil
2tbsp lemon juice
ground black pepper (to taste)
1tsp chopped garlic chives


Cut the haloumi cheese into 3/4 slices. Heat the tablespook of olive oil in a large frying pan over heat. Add haloumi slices and fry until golden brown on both sides. Place slices of haloumi on top of each salad. I prefer to use vinegar and olive oil for the dressing though :)

Apples and oranges :)


Inspired by Delifrance's salad...this is nyummy! All you need:

Apples (apel malang is better then apel fuji...for me), oranges, salads. And as for the dressing, just  mix sesame oil, soy sauce and ginger. Go try it! :)

Beetroot leaves with sweet onions and feta

When I was volunteering for Desa YUM Cipanas, one of the Australian volunteers, Devin, told me and Echa that beetroot leaves are delicious (while we're on the organic farm). So I thought since I got the beetroot from YUM's organic farm, why not just try it. So I googled some recipes for beetroot leaves...and I found this one. And it was nyummy :)





Ingredients:
6 medium beetroot with fresh leaves
100g sultanas or raisins
1 onion, halved and finely sliced
3 tbsp olive oil
100g baby spinach leaves
2 tbsp pine nuts, toasted
100g feta
Sea salt and black pepper

Dressing:
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 to 2 tbsp lemon juice   

How to make it: 
Cut the stems and leaves from the beetroot and set aside. Scrub the beetroot and cook in a large pot of simmering water for 1 1/2 to 2 hours, until tender when pierced with a skewer. Rub the skins off under cold running water, cut into wedges and toss with 1 tbsp olive oil to coat.
Wash the stems and leaves and roughly chop. Pour 150ml boiling water over the sultanas and leave for 20 minutes, then drain. Whisk the dressing ingredients in a large bowl.
Heat 2 tbsp olive oil in a non-stick fry pan and cook the onion over medium-high heat, tossing well for 10 minutes until golden brown. Add the sultanas and pine nuts, tossing well.
Cook the beetroot stems and leaves in simmering salted water for 2 minutes. Add the spinach for 15 seconds, then drain immediately. Toss the greens in the dressing, divide between four plates, top with the fried onions and scatter with crumbled feta and pine nuts.

Orange Salad :)

This is probably gonna be my favorite salad at the moment. Got this recipe from Jamie Oliver's Food Revolution Day's instagram @FoodRev. Loving the taste and colors. Just prepare some green salads, oranges, walnuts, feta cheese and a bit of olive oil too (if you want to). No need salt or pepper...it's already taste good. I just add some herbs like rosemary, thyme and oregano or basil. Nyummmmm! :)

Strawberry pancetta haloumi mint salad :)

I was watching Jamie Oliver's at TLC last week and this salad was very colorfull :) Always love colorfull food with their own natural colors. So I give it a shot...

All you need:


Strawberries, slices of pancettas, salads and mint leaves...


Slices  of haloumi cheese...you fried them on a pan with a bit of olive oil...


Olive oil and Balsamic vinegar for the dressing...

and voila!...


Don't you just love the colors...and it's very nyummy too. It's easy...go have a try! :)

Sweet Potato salad

I just love orange/red sweet potato, so I tried this one.


All you need:

-Lettuces
-Sweet potato (red/orange) ..boiled...
-Onion
-Cheddar cheese (cut into small dices)...

The ingredients for my version of caesar salad dressing are:
a bit of anchovies, 2 tbsp mayonaise, a couple of mashed cloves of garlics, olive oil, a bit of lemon juice. Basicly how much for this and that it's up to your taste. 
Just mix everything, season with salt and pepper, and then you'll get your caesar dressing :)

Don't you just love the color? I just love colorfull food, especially with their own natural colors :)

Our fruit salad :)

Today at school, we're teaching the kids about healthy food. This time we're discussing about fruits. And to make it fun, we're making our own fruit salad. Since I love colors, when it comes to food, i like to play with colors too, especially when it's all natural.


Just prepare...


For the yoghurt, since it's plain, you can add a bit of sugar if you want too. But for me, I already get the sweet taste from the fruits, so no need to add sugar. But it's up to you :)




 Sometimes I put grapes and mueslies too.

This fruit salad is very simple, you can try this at home with your kids. You can eat it yourself or together. It's healthy...go try it and enjoy! :)

I ♥ colorful salad :)

I love to eat salad because it's easy haha...and I love to mix the ingredients, it's a fresh healthy food. And with salads, I can make it colorful too (with it's own natural color of course), it makes me happy to eat it :)

Here are some of the salads I've made. I took some pics so I can share it with you, and of course the recipe too :)


Ingredients :
(the amount it depends on your taste)
-You can use fresh lettuce and mix it with mizuna (japanese greens), or you can mix red leaf lettuce  with oakleaf leattuce. But my faves at the moment are fresh romains and arugula.
-Fresh strawberries
-Fresh peeled mandarin orange
-Boiled chicken (and chop the chicken)
-Some parmigiano cheese
-And strawberry dressing.

How to make the strawberry dressing (and the amount it depends on your taste):
6-8 large strawberries
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar or freshly squeezed lemon juice
1/4 cup water
1 clove garlic
1 teaspoon honey

Just mix all of them and voila....you will have a nyummy colorful salad :)

                    
                                                      
And here is another simple salad recipe that I got from Pepenero restaurant. I made it last week, it's one of my fave salad at the moment :)


Ingredients :
(the amount it depends on your taste)
-Fresh rucola
-Fresh pears (cut into slices)
-Some pine nuts
-Italian pecorino cheese or you can use parmigiano (cut into slices)
-And honey dressing

How to make the honey dressing (and the amount it depends on your taste):
-Honey
-Red wine vinegar

Try it...you'll love it :)
