Happy Valentine's Day ♥

Okay, today is Valentine's Day :)

I don't know why some people made a bad joke about it, but hey...we're all have our differences right? so it's okay. For me, it's okay to celebrate Valentine's Day...it's about love anyway....nothing is bad about it right? And we can also talk about love with our student...such as love and care for their mother, father, sister, brother, pets, family, friends, people, nature...and so on. So yes, me and my student celebrates Valentine's Day. We made a big Valentine's Day card for our classroom :)

Chicken Divan

When I was in Seattle I used to work at a day care. And they served this Chicken Divan (Sarah, my friend was the chef there, so I got the recipe from her). It's simple and nyummy, even the kids loved it. You can eat it with or without rice in it (because Sarah used to baked it with cooked rice in the middle of the layer), it's up to you :)


Ingredients: 
10 ounces each broccoli spears, or 1 bunch fresh trimmed broccoli
2 cups sliced cooked turkey or chicken
2 cans condensed cream of chicken soup
1/2 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/2 cup shredded Cheddar cheese
1/2 cup soft bread crumbs, tossed with 1 tablespoon melted butter 

How to make it:
Cook broccoli in a small amount of boiling water until crisp-tender; drain. Arrange the broccoli stalks in a greased 11 1/2 x 7 1/2 x 1 1/2-inch baking dish. Arrange turkey or chicken over the broccoli spears. Combine the soup with mayonnaise, lemon juice, and curry powder; pour over all. Sprinkle with shredded cheese, then top with buttered bread crumbs. Bake at 190°C/375°F for 25 to 30 minutes, until heated through.
Chicken divan recipe serves 6.


As for me with extra curry powder :p

Little Joy ♥

I've heard them from Little Joy's Myspace back then. Little Joy was formed in 2007 by Los Hermanos, Fabrizio Moretti and Binki  Shapiro. Who doesn't love Fabrizio Moretti?? :p 
After a while waiting and waiting, at last my good friend gave me the whole album :)
I think it's really really pure joy listening to this album "Little Joy" by Little Joy.

Chicken Pasta Casserole

 

I got this recipe from all-recipe's web.

 

Ingredients

  • 2/3 cup chopped onion
  • 1 garlic clove, minced
  • 1 tablespoon olive or canola oil
  • 1 1/2 pounds boneless skinless chicken breasts, cut into 3/4-inch cubes
  • 1 (14.5 ounce) can chicken broth
  • 1 1/2 cups chopped carrots
  • 3 celery ribs, chopped
  • 1/2 teaspoon dried savory
  • 3 tablespoons butter or stick margarine
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 1/2 cups 2% milk
  • 1 1/4 cups shredded reduced-fat Cheddar cheese
  • 8 ounces wide egg noodles, cooked and drained (we used pasta instead of noodles...so up to you)

Directions

  1. In a large nonstick skillet, saute onion and garlic in oil until tender. Add chicken; cook and stir until no longer pink. Add the broth, carrots, celery and savory. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until vegetables are tender.
  2. Meanwhile, in a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Pour over chicken mixture. Add noodles; mix well.
  3. Transfer to a 3-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, 190°C/375°F for 15-20 minutes or until bubbly.
