I love sandwiches. Simple food especially with eggs and cheese? you can count me in :) I found this "Meatless monday cheddar spinach and pepper omelet sandwich" from foodista blog . For me, I can have this not only for mondays :)
Ingredients :
| 1 | medium red bell pepper, chopped | |
| ½ | large sweet onion, chopped | |
| ½ | cup cheddar cheese | |
| 2 | large egg whites | |
| 2 | large eggs | |
| 1 | tablespoon nonfat milk | |
| ||
| 2 | bagels, sliced in halves | |
| 1 ½ | cups bagged baby spinach leaves |
| -Whisk eggs, egg whites, nonfat milk, salt and pepper in a large bowl, set aside. | |
-Add bell pepper and onion to large nonstick skillet pan with a little olive oil, and saute on high heat for a few minutes until softened. | |
-Turn down heat to medium; add egg mixture, tilting pan so the entire bottom is evenly covered. | |
-Cook for a few minutes. | |
-Pop entire pan under broiler. Broil 2 minutes, or until lightly browned. | |
-Arrange four bagel halves on a nonstick pan, cover with cheese. Broil until cheese is melted. | |
-Cut omelet in half, put on two different bagel halves. | |
-Top with a large handful of baby spinach and remaining halves. |
