Homemade lambchop, cauliflower puree & mint sauce

We're in the mood for cooking last long weekend...so we made this one too...

For the Lambchops:

8 chops : bask with 6 tbsp lemon juice, 2 tbsp rosemary, 2 tbsp oregano, 2 tbsp thyme, 3 medium garlic pressed, 1/4 tsp salt and 1/4 tsp pepper.

You put all into the oven for about 30 minutes or...just check it while you're making the sauce and puree..

For the cauliflower puree:

2 heads of 500gr cauliflower

30gr butter

1/2 stick of cheddar cheese

Blend it with a blender/food processor

For the mint sauce:

1/2 cup yoghurt

1/2 cup chopped mint leaves

1 clove garlic

1 tsp lemon juice

salt, pepper and sugar up to taste

Just mix all of that together with a fork in a bowl

Chicken, sweet potato & spinach

Long weekend is here for Chinese New Year and we're in the mood for cooking :)

- For the chicken:
Place crumbs and flour on separate plates. Using a fork, whisk egg in a shallow dish. We added some herbs (thyme and oregano) & parmesan too on the crumbs. Just mix it.

Dip 1 chicken breasts (boneless) in flour, shaking off excess. Dip in egg. Coat in crumbs. Place on a large tray or plate. Repeat with remaining chicken breasts, flour, egg and crumbs. Heat oil in a non-stick frying pan over medium heat. Cook chicken, in batches, for 1 minute 30 seconds each side or until cooked through. Transfer to a plate lined with paper towel to drain

- All you need for the sweet potato:

- medium sweet potatoes, scrubbed clean and cut into dices

- olive oil

- herbs (thyme & oregano), salt, pepper   

Preheat the oven to 200ºC. Toss the sweet potato wedges in a roasting tray with a pinch of salt and pepper, herbs and a drizzle of olive oil. Cook in the hot oven for 35 to 40 minutes, or until golden and cooked through.

- For the spinach:

Just boiled it :)

Simple sweet dessert :)

I remember I made this recipe with my friend, Sarah when I was in Seattle. It's super quick and easy!

All you need:

 For this whipping cream, you whipped it with a mixer so it'll become thick.

Cut the strawberries into half....or just leave it like that :)

 Crunch the maringue...

You can replace the whipped cream with plain yoghurt too...

Okay, so you just put all of these stuff in layers. Whipped cream, strawberries, meringues, whippped cream, strawberries, maringues....and so on....simple right? :) And you can add a squirt of lemon too if you want to.  Or if you don't want it to be too thick, you can replace the whip cream to yoghurt. You already have the sweet taste from the meringues anyway...
Then you just eat all of them :)

Low Fat Banana Bread

Got this recipe from Joy Of Baking website. All you need:

Banana, eggs, whole wheat flour, white flour...

Salt, baking soda, vanilla extract, plain yoghurt, oil, cinnamon powder...

It's nyummy and light! You can eat with cream cheese or cheese :)
