Long weekend is here for Chinese New Year and we're in the mood for cooking :)
- For the chicken:
Place crumbs and flour on separate plates. Using a fork, whisk egg in a shallow dish. We added some herbs (thyme and oregano) & parmesan too on the crumbs. Just mix it.

Dip 1 chicken breasts (boneless) in flour, shaking off excess. Dip in egg. Coat in crumbs. Place on a large tray or plate. Repeat with remaining chicken breasts, flour, egg and crumbs. Heat oil in a non-stick frying pan over medium heat. Cook chicken, in batches, for 1 minute 30 seconds each side or until cooked through. Transfer to a plate lined with paper towel to drain
- All you need for the sweet potato:
- medium sweet potatoes, scrubbed clean and cut into dices
- olive oil
- herbs (thyme & oregano), salt, pepper
Preheat the oven to 200ÂșC. Toss the sweet potato wedges in a roasting tray with a pinch of salt and pepper, herbs and a drizzle of olive oil. Cook in the hot oven for 35 to 40 minutes, or until golden and cooked through.
