I just love Jamie Oliver's magazine. By just looking at the picture, makes me want to try all of the recipes.
And we're in the mood to make his version of bread pudding...with a bit of twist...
All you need:
-500gr bread. We used brown bread.
-125gr soft brown sugar, plus a little extra to sprinkle
-1 egg
-85gr butter
-85gr currants
-85gr sultanas
-1 1/2 - 2 mixed spice (I just love to put extra cinnamon :) )
How to make it:
1. Put the bread in a bowl, pour over 750ml milk and leave to soak for 1 hour. By, the way, for Jamie's recipe he used water instead of water. But we prefer milk :D
2. Preheat the oven 180C. Using electric mixer, beat the bread until it smooth, then add all the remaining ingredients and mix thoroughly.
3. Transfer the mixture to a deep baking dish (something like a lasagna tray) and bake for 1 hour, untill firm and golden brown.
4. Sprinkle a little brown sugar on top if you want to.
With rainy season and breezy weather....serve it warm with vanilla ice cream :)
